Gluten-Free, Dairy-Free, Refined Sugar-Free Banana Muffins

When I was first diagnosed with celiac disease and PCOS, one of the hardest adjustments wasn’t just avoiding certain foods – it was feeling like I had to give up the foods I loved.

Many gluten-free or dairy-free baked goods I tried felt like a compromise. Either the flavor wasn’t quite right, the texture was off, or the ingredient list was full of refined sugars, seed oils, and additives.

Over time, I realized something important:
supporting your health doesn’t have to mean losing the joy of food.

These banana muffins were created from that place. I wanted something simple, nourishing, and naturally sweet that could still feel like a treat — without gluten, dairy, refined sugar, or overly processed ingredients.

They come together quickly (about 10 minutes of prep) and bake into soft, flavorful muffins that are perfect for an after-dinner dessert or something sweet alongside a cup of tea.

And the best part: they’re incredibly adaptable depending on what you have in your kitchen.

Gluten-Free, Dairy-Free, Refined Sugar-Free Banana Muffins

These muffins are:

• Gluten free
• Dairy free
• Refined sugar free
• Naturally sweetened with bananas and coconut sugar

Ingredients

Wet Ingredients

  • 1/3 cup (5 tbsp) melted coconut oil
  • 2 large eggs
  • 1/4 tsp alcohol-free vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 medium bananas)

Dry Ingredients

  • 1/2 cup coconut sugar (golden works great, but any coconut sugar will do)
  • 1 1/2 cups Bob’s Red Mill 1:1 Gluten-Free Baking Flour
  • 1/4 tsp baking soda

Optional Flavor Add-Ins

  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup Enjoy Life gluten-free dairy-free mini chocolate chips
  • 1/4 cup chopped walnuts or pecans

You can mix and match depending on what you like.

Instructions

  1. Preheat oven to 375°F and lightly grease a 12-cup muffin pan with avocado oil spray.
  2. In a large bowl, combine the melted coconut oil, coconut sugar, eggs, vanilla extract, and mashed bananas. Stir until well blended.
  3. Add the gluten-free flour, baking soda, and optional spices. Stir until the batter is smooth.
  4. Fold in any optional mix-ins like chocolate chips or nuts.
  5. Scoop the batter ¼ cup at a time into the muffin pan. Fill each cup evenly.
  6. Gently tap the muffin pan on the counter to release any air bubbles. Let the batter sit for 5–10 minutes before baking.
  7. Bake for 18–22 minutes, until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the muffins rest for 10 minutes.
    • If they stick slightly, allow them to cool in the pan before transferring to a cooling rack.
